Domaine des Amiel À Peïssou is a natural monovarietal Syrah red wine produced by Domaine des Amiel.

Domaine des Amiel is the small winery owned by the brothers Aymeric and Jordan Amiel in the Languedoc-Roussillon area. It is located in the small town of Montblac, between Narbonna and Montpellier. The family domaine currently owns 10 hectares of vineyard that it cultivates certified organic and biodynamic.

The vineyards for Domaine des Amiel À Peïssou are between 20 and 35 years old and have a small plot that was planted in 2010 but is already very promising. They cultivate organically and biodynamically, the yields are moderate, from 30 to 40 hectolitres per hectare, and the grapes are structured and balanced, with good acidity. They are manually harvested into 10kg boxes to be able to select the best bunches while still in the field.

In the cellar the grapes forDomaine des Amiel À Peïssou are destemmed and pressed, and then vatted with no commercial yeasts or sulphites added. The plots ferment separately and the macerations with the skins last between one and four weeks. The compounds are gently extracted until the wine has the desired structure. Lastly, the wine ages for 9 months in 225 and 500 litre barrels and in casks. It is bottled without clarifying or filtering but adding a little sulphite to preserve the purity of the wine a little more and to ensure that it is not altered quickly.

Domaine des Amiel À Peïssou is a craft-produced red wine of which about 9,000 bottles are produced. The name of the wine comes from the nickname that was given to Aymeric and Jordan Amiel’s great-grandfather. The clarinet was the instrument he used to play, and symbolises the cultural role that the vine and wine have played in society for millennia.
