Domaine de Fontbonau Côtes-du-Rhône is an organic red wine from the AOC Côtes du Rhône (Rhone) made by the Fontbonau winery with the Garnacha and Syrah varieties.
Domaine de Fontbonau is the project of François Pinault (manager of Château Latour) and Jérôme Malet (manager of Domaine Sarda-Malet), two childhood friends who, with their combined experience, decided to start something new in 1997. With the intention of showing the best of a still little-known region called Drôme Provençale, they use organic farming to cultivate their 42 hectares of vineyards and they make their wine using traditional methods.
Domaine de Fontbonau Côtes-du-Rhône comes from vineyards planted in clay limestone soils, marls, sandy limestone and pebbles and benefitting from a Mediterranean climate. They use organic farming methods, so there are no pesticides or other chemicals that could harm the environment. The harvest is carried out manually when the grapes reach their optimum ripeness.
Limiting intervention with the berry as much as possible, all the equipment used to receive, de-stem and press works by gravity. The Domaine de Fontbonau Côtes-du-Rhône must is then fermented at a controlled temperature. It then ages for 12 months in one-year-old oak barrels. The wines are bottled unfiltered.
