Dehesa de los Canónigos Solideo is a red wine coupage of the Tempranillo and Cabernet Sauvignon varieties with a small amount of the Albillo white grape produced by the Dehesa de los Canónigos winery in the D.O. Ribera del Duero in Castilla y León, Spain

 

The grapes used to make the Dehesa de los Canónigos Solideo wine come from vines aged over 80 years old planted in gravel soils. When the grapes reach the winery, they are traditionally vinified. The resulting wine ages for 20 months in second-use American oak barrels and a further four months in new French oak barrels.

 

Solideo is a legendary wine made by Dehesa de los Canónigos. It is their reserva red wine that was released to commemorate the winery’s 25 years. It is made only in exceptional vintages. The name means “before God alone” and is also the name of the six-segment silk cap used by the Pope and other cardinals in the Catholic Church to cover their crown, and can only be removed before God. The name Solideo is a tribute to the winery’s ecclesiastical origins.

 

Dehesa de los Canónigos is a hundred-year-old estate named after the group of 22 canon monks that made up the Cabildo de Valladolid, the estate’s first owner. The winery initially sold grapes to its neighbours Vega Sicilia until they decided to sell their first Dehesa de los Canónigos vintage in 1989. Since then, the winery has gained a reputation in more than 20 countries around the world.
