Cueva del Monge Blanco is a white wine produced by the winery Vinícola Real, a small winery in La Rioja that specializes in high-quality wines. This winery also produces the famous red wine 200 Monges.
Cueva del Monge Blanco is a blend of Viura (70%), Malvasía (20%) and White Grenache (10%).
The grape harvest is carried out by hand, in small boxes of 15kg so that the grapes arrive at the winery in perfect condition.
Once at the winery, the grapes are crushed, drained and pressed without pressure to obtain the free-run juice.
The débourbage happens at a cold temperature and the maceration process occurs in stainless steel deposits at 8-10 degrees.
Once the alcoholic fermentation process begins, the wine is placed in French and American oak barrels where they finish the aging process.
They apply daily bâtonnage over a period of 45 days, then the wine spends time in the barrel until it completes its 4 month aging.
