Couto Mixto Tinto is a natural, organic and vegan red wine made by Couto Mixto - Xico de Mandín in the D.O. Monterrei (Galicia) with the Mencía, Bastardo and Caíño Tinto varieties.
Francisco Perez, also known as “Xico”, cultivates vines as part of his Couto Mixto project. These vines lie in an area where the towns are known as ‘promiscuous’, by which they mean border villages that belonged to both Spain and Portugal. It is here that Francisco Perez is committed to recovering native varieties and using the most traditional winemaking methods to achieve the maximum expression of the area.
Couto Mixto Tinto comes from several estates in a mountainous area with shale and granite soils. This is a total of 3 hectares where the Mencia, Bastard and Caíño Tinto native varieties all grow together. Located in the so-called “raia”, on the border between Ourense and Portugal, these old vines are cultivated using organic agriculture with a very low yield.
In the winery, the Couto Mixto Tinto grapes are trodden in a stone press and macerated with 50% of the skins. Fermentation takes place spontaneously in stainless steel tanks with native yeasts. The wine is not clarified or filtered.
Couto Mixto Tinto carries the marked personality of Xico de Mandín, a winegrower who knows the Galician-Portuguese varieties like no one else and knows how to get the best out of each one. An honest wine made naturally and through tradition.
