Coll del Sabater is a natural red wine made with the Cabernet Franc variety in the D.O. Conca de Barberà by the Escoda Sanahuja winery.
It was Joan Ramón and M. Carme who set up Escoda-Sanguja. They started out in 1997 in Prenafeta (Tarragona) with the aim of producing natural wines. To do this, they have vineyards planted with native varieties that they cultivate using biodynamic methods and with minimal intervention in the winery.
Coll del Sabater comes from a vineyard planted in clay-calcareous soil at an altitude of 450 metres above sea level. They use organic farming and biodynamic treatments and the vineyard is covered by a blanket of vegetation to maintain the natural balance of the soil. The estate has an orchard, fruit trees and a farm, which allows self-sufficiency with natural compost that is free from toxic waste. The harvest is carried out manually at the optimum moment of ripeness.
In the winery, the Coll del Sabater grapes are partially destemmed. They then macerate for about 5 days and ferment spontaneously with native yeasts in clay amphorae. Then the wine ages for 7 months in amphorae with its lees. Finally it is bottled without filtering or clarifying and rests for 6 months before going to market.

Coll del Sabater 2018 is a juicy red wine with aromas of black fruits, mineral notes and an earthy background. On the palate it is fresh, fruity and well structured. The finish is persistent and long with touches of undergrowth.

D.O. Conca de Barberà
As with many other Catalonian wine regions, theDO.Conca de Barberàis developing its own territorial identity that over the years has been redefining the personality of the wines and the region, with the help of the red Trepat grape variety. The Trepat grape can be used to produce good sparkling rosés, rosés with character, fresh red wines, as well as elegant blanc de noirs. In just a few years the region and this grape variety have shown their potential, their versatility, and the possibility of carrying out R&D (Research and Development) with them. There are still few wineries who produce single variety wines using this grape, but most importantly, all of them have become aware of the obligation to enhance the uniqueness that defines the territory and the new style of wine to be imposed in the twenty-first century.
