Characteristics Coll del Sabater
Coll del Sabater is a natural red wine made with the Cabernet Franc variety in the D.O. Conca de Barberà by the Escoda Sanahuja winery.
It was Joan Ramón and M. Carme who set up Escoda-Sanguja. They started out in 1997 in Prenafeta (Tarragona) with the aim of producing natural wines. To do this, they have vineyards planted with native varieties that they cultivate using biodynamic methods and with minimal intervention in the winery.
Coll del Sabater comes from a vineyard planted in clay-calcareous soil at an altitude of 450 metres above sea level. They use organic farming and biodynamic treatments and the vineyard is covered by a blanket of vegetation to maintain the natural balance of the soil. The estate has an orchard, fruit trees and a farm, which allows self-sufficiency with natural compost that is free from toxic waste. The harvest is carried out manually at the optimum moment of ripeness.
In the winery, the Coll del Sabater grapes are partially destemmed. They then macerate for about 5 days and ferment spontaneously with native yeasts in clay amphorae. Then the wine ages for 7 months in amphorae with its lees. Finally it is bottled without filtering or clarifying and rests for 6 months before going to market.
Coll del Sabater is a very fruity and fresh natural red wine born from a commitment to respecting the earth’s produce as much as possible.

Coll del Sabater 2018 is a juicy red wine with aromas of black fruits, mineral notes and an earthy background. On the palate it is fresh, fruity and well structured. The finish is persistent and long with touches of undergrowth.
