Clos du Rouge Gorge Blanc is a natural white wine made with Macabeo and a little White Grenache. It is rated as a VDP des Côtes Catalans and is produced by Closdu Rouge Gorge.
Clos du Rouge Gorge is the small young winery run by Cyril Fhal. He works its 6 hectares of vineyards, aged up to 100 years old, biodynamically and vinifies them according to the philosophy of minimal intervention, simply by accompanying the processes and allowing the grape and the terroir to express themselves fully and finely. His vineyards’ yields are very low, with the lowest being up to 18-20 hectolitres per hectare.
The vineyards for Clos du Rouge Gorge Blanc are about 80 years old and their soils are composed mainly of gneiss. The grapes on the plot are harvested manually and are prepared following the philosophy of minimal intervention, by fermenting them with native yeasts. The final wine is aged for 8 to 9 months on lees in 500 litre barrels and in a 12 hectolitre foudre, and is bottled after being clarified by natural decanting.
To reduce the sulphur added when bottling, Clos du Rouge Gorge Blanc is bottled with a little residual carbon dioxide from the fermentation. To eliminate it, you can decant the wine and shake it a little, otherwise, if you prefer, you can keep it, since it is part of the wine.
