Neither short nor lazy, he begins a new stage in which he produces elegant and concentrated wines faithful to the character of the denomination and they become great ambassadors of the Cru de Beaujolais. Along with the winemaker Pablo de Santiago, they put all their efforts into highlighting the fruit and finesse that is hidden behind vineyards that are planted on the best soils of volcanic rock and schist.
Manchès has a special affection for this Bordeaux terroir from his childhood, so it is not surprising that everything made from these spectacular 8.5 hectares is worthy of admiration. Their Château Grange Cochard Les Charmes is an example of this. A red wine made with the Gamay variety from vines aged between 40 and 100 years old and planted on stony and clay soils. Viticulture is in the process of converting to organic and the advanced age of the vine results in low yields with small intense berries. All the work is carried out by hand and the grapes are carefully harvested in small buckets of 18-20 kgs each. In the winery, the grapes are thoroughly selected and they undergo a traditional semi-carbonic maceration in vats with half of the clusters whole and half destemmed. The wine is then aged in concrete tanks.
