Chandon de Briailles Savigny 1er Cru Aux Fournaux is an ecological and biodynamic, barrel-aged red wine made by Domaine Chandon de Briailles with the Pinot Noir variety in the AOC Savigny-Les-Beaune / Côte-d'Or (Burgundy).
Chandon de Briailles is a true Burgundy treasure lying a few kilometres north of Beaune. A winery with a long family history that has been making wines since 1834. The wine estate is now run by the Nicolay couple and their two sons Claude and François. They have around 13 hectares of vines spread acorss the municipalities of Savigny-Lès-Beaune, Pernand-Vergelesse and Aloxe-Corton that are cultivated using sustainable practices and according to biodynamic principles. As a result, they produce wines with vibrant fruit and pure minerality.
Chandon de Briailles Savigny 1er Cru Aux Fournaux comes from a 1er Cru of vines planted in deep clay soils with limestone. Since 2008, the vines have been cultivated using organic farming with biodynamic treatments to achieve the maximum expression of the terroir and the vintage. When the grape reaches optimum ripeness, it is harvested manually.
The Chandon de Briailles Savigny 1er Cru Aux Fournaux grapes are carefully selected, partly destemmed and partly left whole and placed in open vats to ferment spontaneously with native yeasts. Minimal sulphur is added, but no other oenological products are used. The wine then ages for 14 to 18 months in old barrels and with minimal racking to protect it from possible oxygenation. Finally, the wine is bottled without clarifying or filtering.
Chandon de Briailles Savigny 1er Cru Aux Fournaux is a highly refined, floral Pinot Noir. A great example of balance between complexity and delicacy that is made according to a biodynamic philosophy and expertise.
