Castello dei Rampolla Chianti Classico is a red wine made from Sangiovese with a little Cabernet Sauvignon and Merlot, produced by Castello dei Rampolla. It belongs to the DOCG Chianti Classico, from the area of Tuscany.
Castello dei Rampolla it is a reference bodega in its denomination, Chianti. The winery has cultivated biodynamically since 1994, and is known for being one of the pioneers in practicing viticulture without chemicals and for its winemaking practices that are virtuous and involve very little intervention. It has 42 hectares of vineyards on calcareous soils located about 360 metres above sea level. Its vineyards have a high planting density. This limits the production per plant due to the competition between them, thus producing a denser and more structured grape.
The production of Castello dei Rampolla Chianti Classico is managed by the prestigious winemaking consultant Giacomo Tachis. It is made by fermenting with native yeasts in traditional cement vats. It then ages for 8 months, also in cement tanks. It then spends 12 months in 12 hectolitre barrels and is finally bottled without clarifying or filtering.
