Castaño Monastrell is a red wine from D.O. Yecla produced by the winery Castaño. It is a single-variety wine of Monastrell – the most characteristic grape variety of the area – as its name suggests.

The climate in the region is Mediterranean and continental. There is a great temperature difference between winter and summer, which allows for an excellent ripening. Rainfall is somewhat scarce and sun hours are abundant.

The grapes used in this wine come from a vineyard that is just over 30 years old, planted on stony and calcareous soil. Located in two different farms – Las Gruesas and Pozuelo – the vines are planted at around 750 metres of altitude and have a sun exposure that goes from north to south. The vineyard is cultivated with short pruning and it is trained using the vase-shape and espalier techniques.

After the harvest, the bunches are quickly taken to the winery’s facilities. First, they undergo a fermentation process at a controlled temperature of 28ºC. Then, they are subjected to a maceration that lasts ten days. The resulting must of Castaño Monastrell is transferred to stainless steel deposits where it goes through the malolactic fermentation. This wine is not aged and is bottled without stabilising.
