Cascina Fonda Moscato d'Asti Bel Piano is a sparkling wine made by Cascina Fonda with the Moscatel de Grano Menudo variety in the DOCG Moscato d'Asti, in Piedmont (Italy).
Cascina Fonda is a family winery located in the Langhe, a UNESCO world heritage site. In 1988, Massimo and Marco took over the dream project started by their father Secondino Barbero in 1963, producing mostly Moscato d'Asti wine. This is a very special sparkling wine made with the Moscato variety that stands out for its freshness and sweetness.
With an area of 12 hectares, Cascina Fonda Moscato d'Asti Bel Piano is the result of a mixture of all the winery’s vineyards, with “Bel Piano” standing out. This is a southeast facing vineyard with loamy and moderately sandy soils. The vines are cultivated using traditional agriculture and yields are limited to 95 kg/ha.
In the winery, the Cascina Fonda Moscato d'Asti Bel Piano grapes are destemmed, crushed and macerated with the skins for a few hours. They are then pressed and the resulting must ferments at a controlled temperature of 16ºC for about 20 days with the addition of selected yeasts to obtain an overpressure of 1.5 bar. Finally, before bottling, it is stabilised through a 4ºC refrigeration followed by a microfiltration.
