Cascina degli Ulivi Mounbè is a natural red wine made form Barbera with a little Dolcetto and Ancellotta. It is produced by Cascina degli Ulivi, from the Piedmont area.

Cascina degli Ulivi has been run since 1977 by Stefano Bellotti, one of the fathers of Italian biodynamics, who has practiced it in his vineyards since 1984. In addition to vineyards, cereals are grown on the estate and fresh pasta and cheese are produced. Belloti has been an instructor for many young winemakers. Sadly he left us in 2018 and nowadays it is his daughter Ilaria who continues with his legacy.

The vineyards for Cascina degli Ulivi Mounbè cover an area of 3.5 hectares and are cultivated biodynamically. The vines are trellised, trained with lateral cordon and have an average age of 25 years. They produce around 80 hectolitres per hectare and are harvested manually.

Once in the cellar, the grapes for Cascina degli Ulivi Mounbè are destemmed and vatted. They are fermented in 25 to 30 hectolitre oak casks and macerate with skins for about 30 days. Once fermented the wine is refined in 500 to 700 litre barrels for around 14 to 16 months.

Cascina degli Ulivi Mounbè is a morbid and nervous dry red wine, with an optimal intensity and balance.
