Cap de Barbaria is a VT Formentera wine produced by the Cap de Barbaria winery from Cabernet Sauvignon, Merlot, Monastrell and Fogoneu, the same grape varieties used to produce Ophiusa.
In order to produce Cap de Barbaria, the maceration with the skins is prolonged as much as possible, even after the alcoholic fermentation is completed, in order to extract to the utmost the tannic components of the grape skins.
The ageing of the Cabernet Sauvignon and Merlot grapes takes place in different types of new and second-year French oak barrels whereas the varieties Monastrell and Fogoneu are aged in American oak barrels. The duration of stay of the wine in the barrels is variable and only the taste test, that is the wine tasting, is which decides the changes of barrels and the optimal moment for separating the wine from the wood.
