Cantina Giardino Le Fole is a natural, organic and vegan red wine made by the Italian winery Cantina Giardino in the IGP Campania with the Aglianico local variety.
Cantina Giardino is run by Antonio and Daniela De Gruttola, a caring couple who passionately work to preserve the wine tradition of the Campania area. To this end, they rely on local varieties, their winemaking methods involve minimal intervention and they don’t use any oenological products. In conclusion, these are wines made in the old style.
Cantina Giardino Le Fole comes from a 75-year-old remote vineyard planted at 500 metres above sea level. Anglianico is a local native variety that is at its best growing in volcanic soils following organic principles. All the work is done by hand and yields are limited to achieve healthy fruit with character.
Once the Cantina Giardino Le Fole grapes have been selected, the must macerates with their skins for about one month. Fermentation takes place with native yeasts and without controlled temperatures. It is then aged for 24 months in old chestnut barrels. Finally, the wine is bottled without filtering, clarifying or adding sulphites.
