Cair Selección La Aguilera is a red wine made in barrels by Dominio de Cair in the Ribera de Duero DO (Castilla y León) with the red Tempranillo variety.
Dominio de Cair is the project of the prestigious wine family Luis Cañas, in the la Ribera del Duero DO. A new challenge which began in 2008 from centuries-old vineyards of limited production, which are vinified in cutting-edge, state-of-the-art facilities.
Cair Selección La Aguilera originated in vineyards located in the Burgos town of La Aguilera. The vines are more than 45 years old, planted 800 meters above sea level. The soils are poor, composed of clays, limestones, sands and gravel and traditional agriculture is practiced, limiting production. The harvest is manual in small 11 kg boxes, with holes for good ventilation.
In the winery the Cair Selección La Aguilera grapes are kept in a cold room at 5ºC. Then they go through a double selection on the table of bunches and grapes and only those which are in perfect condition ferment in stainless steel tanks at a controlled temperature. The wine is then aged for 14 months in French and American oak barrels, 50% in new barrels and 50% in second wine barrels. Finally, the wine is bottled and rests a minimum of 12 months before being commercialized.
As a result of the veteran Riojan Luis Cañas, in the soils of Castilla y Leon, Cair Selection La Aguilera is a wine which originates from the small hamlet of Aranda de Duero (Castilla y León) and noted for its power in balance.
