Ca' Di Mat Valautín Albillo is a barrel-aged white wine made by Ca' Di Mat in the D.O. Vinos de Madrid (Madrid) with the Albillo variety.
Ca' Di Mat, which means “House of Fools” in a Piedmont dialect, is the name of the wine project set up by Curro Bareño and Jesús Olivares. These are two young winemakers who, having set up the innovative projects Fedellos de Couto and Ronsel de Sil in Galicia, decided to try their luck in an area much closer to home; in the town of San Martín de Valdeiglesias, in the Sierra de Gredos.
Ca' Di Mat Valautín Albillo comes from several small vineyards planted in granite soils and lying about 800–850 metres above sea level. These are old vines aged between 30 and 80 and surrounded by olive trees, almond trees and orchard. They are cultivated using environmentally friendly agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.
In the winery, the Ca' Di Mat Valautín Albillo grapes are directly pressed and the resulting must spontaneously ferments with native yeasts in French oak barrels. There the wine ages for 8 months.
Ca' Di Mat Valautín Albillo is a sample of the great work being done in Sierra de Gredos. A white wine made with the native Albillo variety that is smooth, delicate and very mineral.
