Bolognani PerNilo Trento DOC Extra Brut is a sparkling wine made with the Chardonnay variety by the Bolognani winery in the DOC Trento, in Trentino (Italy).
Founded in 1952, Bolognani is a small family winery typical of Trentino that produces small selections from the countryside. Now the founder's children, Diego, Sergio, Renzo and Lucia continue the legacy and produce mainly fragrant and balanced white wines with grapes from the mountainous areas of Lavis, Val di Cembra and Trento.
Bolognani PerNilo Trento DOC Extra Brut comes from 4 hectares of vineyards located in the Cembra valley and the high hill of Trento. Respectful agriculture is practiced, with sustainable treatments and the grapes are harvested by hand in boxes with selection in the vineyard.
In the winery, the grapes of Bolognani PerNilo Trento DOC Extra Brut are gently pressed and the must obtained is fermented in stainless steel tanks and a small part in used wood. It undergoes a second fermentation in the bottle and remains in the cellar for a minimum of 48-52 months until disgorging. 4 gr/litre of sugar is added, and it remains in the cellar for at least 5-6 months before being sold.
Dedicated to Nilo, the founder of the winery, Bolognani PerNilo Trento DOC Extra Brut is a blanc de blanc made according to the traditional method with a fragrant bouquet and a mineral flavor.
