Billaud-Simon Chablis Grand 1er Cru Mont de Milieu is a barrel-aged white wine produced by the Billaud-Simon winery with the Chardonnay variety in the prestigious French denomination AOC Chablis Premier Cru, in Burgundy (France).
Owner of some of the best vineyards, the Billaud-Simon winery has a long winemaking history in Burgundy. It is now run by Bernard Billaud and his nephew Samuel Billaud, who have managed to take the family winery to the next level by bringing in new, innovative technologies. As a result, they produce pure, mineral and very elegant wines.
Billaud-Simon Chablis Grand 1er Cru Mont de Milieu comes from a single 2.75-hectare plot with well-drained soils mainly composed of clay and limestone (kimmeridgian). The team use environmentally friendly agriculture to maintain the natural balance this very prestigious terroir and the harvest is carried out when the grapes reach 12 or 13 degrees.
When the grapes have been selected, they are put through a pneumatic press and the Billaud-Simon Chablis Grand 1er Cru Mont de Milieu must cold macerates for 5 to 7 days. Fermentation lasts for 15 to 18 days at a controlled temperature and following malolactic fermentation, the wine ages for about 14 months and is racked twice before being bottled.
Billaud-Simon Chablis Grand 1er Cru Mont de Milieu is a very expressive, but not excessive, Chablis. Delicious and perfectly-balanced Chardonnay.
