Baroni Di Pianogrillo is an old Sicilian fiefdom with a lot of history. Located in the hills of the old Modica County, in Chiaramonte, in the Iblei Mountains, the latest generation of the family, Lorenzo Piccione di Pianogrillo began transforming his property into an organic estate and making his own wines in 2014. As a result, he produces excellent quality wines that reflect the original character of the place.
Baroni Di Pianogrillo Dèracinè Nero D'Avola comes from 2 hectares of vineyards lying 480 metres above sea level. These vines are planted in calcareous soil and are cultivated using ecological and organic methods and no chemical products. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the Baroni Di Pianogrillo Dèracinè Nero D'Avola grapes are selected and destemmed and then they undergo fermentation on skins in conical stainless steel vats for 6-8 days at a constant temperature of 22-24ºC. They are then pressed and the wine is aged in oak barrels for at least 24 months.
