Ausonia Montepulciano d'Abruzzo Apollo is a biodynamic red wine made by Ausonia with the Montepulciano variety in the DOC Abruzzo, in the Abruzzo region of Italy.
Ausonia is run by Simoni and Francesca, a couple who left their jobs as a pharmacist and engineer to dedicate themselves to their true passion; vine cultivation and winemaking. Located in Atri, in the province of Terama, they have been producing magnetic wines that are faithful witnesses to the territory and its vintage since 2008.
Ausonia Montepulciano d'Abruzzo Apollo comes from native vines planted in calcareous and clay soils. They are cultivated using organic and biodynamic agriculture and the harvest is carried out manually when the grapes are properly ripe.
In the winery, the Ausonia Montepulciano d'Abruzzo Apollo grapes ferment with native yeasts and with the skins for about 10 days in stainless steel tanks. The wine is then bottled unclarified and unfiltered, and it rests in the bottle for a while before being sold.
