Cuevas de Arom is the new project of Bodegas Frontonio in Ainzón , Zaragoza. Here, Fernando, Mario and Francisco, vinify old Grenache in the traditional way, recreating the atmosphere of the caves of Ainzón, where wine was made in the olden days. To do this, they have cement deposits below the Cooperative Santo Cristo de Ainzón. Here, they age their wines at very low temperatures and thus less oxidation.
Cuevas de Arom works with the vineyards of the cooperative partners with the aim of placing value on some of the oldest and most unique Grenache vineyards. Their wines seek a more elegant profile with more freshness, thanks to a slighter extraction and less marked notes of the barrel.
As Ladieras is a wine made with Grenache from vineyards that are over 50 years old, planted on deep calcareous soils with clay, located in the municipality of Ainzón.
After the manual harvest, the grapes are cooled for 48 hours. After this time, the grapes are destemmed and fermented in 4000-litre open vats with native yeasts. After the fermentation, the wine is transferred to oak barrels to carry out the malolactic fermentation. Here, the wine will rest for a year. Part of the wine also ages in egg-shaped and cement deposits.
