Ars Collecta Gran Reserva 457 is a Cava Gran Reserva made by Codorniu. It is the greatest work in the Ars Collecta collection: a blend of Chardonnay, Pinot Noir and Xarel.lo.

The grapes used come from the best vines controlled by the winery, specifically from estates located in up to three different climatic zones. This combination lends unique and unrivalled characteristics to the cava. The Pinot Noir was born in Conca de Barberà, the Xarel.lo, unsurprisingly, is made in Penedès, and the Segrià comes from the Chardonnay grape. 

The grape harvest takes place at night, taking advantage of the low temperatures, and is carried out manually to protect the berries as much as possible from potential damage. Vinification of each variety takes place independently and the final assembly of the cava is not carried out until the moment of bottling.

Ars Collecta Gran Reserva 457 ages in the bottle for a minimum of 90 months before being sold.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
