Ars Collecta Blanc de Noirs consists of the new Ars Collecta collection that the Codorníu winery produces with its best vineyards. Three Limited Edition Brut Gran Reserva cavas that are the result of the experience and know-how of a winery with more than 500 years of history.
With the help of its oenologist Bruno Colomer, Ars Collecta Blanc de Noirs is made with Pinot Noir and Trepat grapes, grown in an inland area with a continental climate, and Xarel·lo, which comes from the Mediterranean area of Penedès. Vines from plots located in locations with very different characteristics and whose climatology provides the specific properties that each of the varieties needs to achieve their maximum expression.
The Gran Reserva Ars Collecta Blanc de Noirs varieties start to be harvested at the beginning of August, at night, in order to preserve the intrinsic properties of the grapes. Once in the cellar, the grapes are gently pressed in a pneumatic press and the must is fermented in small batches at a constant temperature of 17ºC. After the coupage the bottles are placed in the depth of the cava to start the natural process of second fermentation, which lasts for 35 months. After this time, the sediments deposited are removed by riddling and disgorging. Liqueur d’expedition is then added and the bottle is capped with a cork stopper.
Ars Collecta Blanc de Noirs is a Brut Gran Reserva cava with a fine and delicate bubble that stands out for the elegance that the Pinot Noir variety provides, and for the complexity that such a long period of ageing brings.
