Aigua de Llum is a white wine from Priorat prepared by Celler Vall Llach.

Enric Costa cultivated strains of Viognier 2000, a variety that he loved in a place full of magic and mystery. Six years later came the first grapes, whose quality, flavour, originality and aromas surprised everyone. 50% of Viognier is fermented in new French oak barrels with a capacity of 300 litres. The rest of Viognier grapes is fermented with other varieties in stainless steel tanks. A controlled fermentation then takes place for 25-60 days with daily movement. Viognier wine rests in the same barrels where fermentation took place and the rest of the wine goes to new French oak barrels of 225 litres.

Celler Vall Llach was created at the beginning of the 90s by the singer Lluís Llach and the notary public Enric Costa in Porrera, one of the nine villages that comprise D.O.Q. Priorat. It is a very small winery that chooses to carry out the controlled microproduction of its farms or “trossos” with the aim of always putting quality before quantity. For this reason, at Celler Vall Llach have established a limit to the extension of their production and growth. Their aim is to keep the personalised and exhaustive control of each one of their wines, which are considered to be fascinating and unique. This is why at Celler Vall Llach they turn the relationship between human beings and the land into a delicate balance between the effort of a hard cultivation and the enjoyment of unique results.
Priorat is craftsmanship and tradition, old and robust vines that are grown and born deep inside the province of Tarragona. They are grown on slopes that are sleety with low fertility and difficult to grow in. In Priorat they produce great red wines of an excellent quality, a maroon colour, robust, dense and rich flavour, intense aromas and sometimes there are reflections present of minerals from the soils.
