Agustí Torelló Mata Ubac Gran Reserva is a sparkling wine that has aged for 30 months in the bottle, made by Agustí Torelló Mata with the traditional varieties of the D.O. Cava: Macabeo, Parellada and Xarel·lo.

Although Agustí Torelló Mata does not come from a winemaking background, he was very attracted to this world from a young age and so he made it his profession and passion. In 1953 he set up the first wine analysis laboratory in Sant Sadurní d'Anoia (Barcelona), Cava capital, and throughout his professional career he has directed some of the sector’s great wineries. At the same time, in 1993 he launched his own personal project under his own name: Agustí Torelló Mata, a family winery with a well-established prestige.

Agustí Torelló Mata Ubac Gran Reserva comes from vines over 30 years old. These vines are cultivated sustainably using environmentally friendly techniques and no harmful chemicals. Production is limited to increase the concentration of the grapes and when they reach optimum ripeness, they are selected and harvested manually, one by one.

In the winery, the Agustí Torelló Mata Ubac Gran Reserva grapes are gently pressed. The must is placed in small stainless steel tanks and each variety is vinified separately over 3 months at a controlled temperature. Then, after the winemaker's coupage, a second fermentation takes place in the bottle over 30 months. Finally, the bottle is uncorked to remove the lees and it is sold with the year of harvest and the date of disgorgement printed on each label.

Agustí Torelló Mata Ubac Gran Reserva is a sparkling wine made through a thorough selection of grapes, a select coupage and long aging. As a result it shows all the elegance and typicity of a good cava.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
