Cygnus Albireo Brut is a cava produced by the Celler U Més U winery in Guardiola de Font Rubí, D.O. Cava.
Celler U Més U is the name of the project created by Josep Anton Bonell and oenologist Josep Piñol in 2000 in the Masia Navinés (Guardiola de Font Rubí).
Their philosophy is a commitment to the land and love for the vines. This, alongside their passion for their work, results in attractive, elegant, modern and pleasant wines.
The winery Celler U Més U is located in the heart of Penedés. They cultivate almost all their vineyards organically, giving importance to the native varieties, without leaving behind the international ones that have adjusted to the region so well.
Cygnus Albireo Brut is a cava made from Parellada, Xarel·lo and Macabeo from their own vineyards with organic certification.
The grapes are harvested manually and placed in boxes. Once they reach the winery, the grapes are destemmed and pressed. When the must has been cold-settled, it ferments in stainless steel tanks, each variety on its own. Following the fermentation the coupage is made, and the cava is bottled for its second fermentation in the bottle. After at least 14 months, the bottle is disgorged to get rid of the lees from the second fermentation and add liqueur d'expédition.
Cygnus Albireo Brut is a complex, broad and elegant cava. The aromas of ripe red fruit stand out with toasted hints from its barrel aging. On the palate, it is voluminous and quite long lasting.
