About Yavallo

Yavallo is a red wine from D.O. Arribes, produced by Alvar de Dios Hernández.

After working in several different wineries, Alvar de Dios decided to start his own personal project, demonstrating the value of the old vines owned by his grandfather in the town of El Pego. His clear effort towards an organic-biodynamic cultivation and a classic production, result in fine and tasty wines. Alvar de Dios has managed to position himself amongst the most important winemakers of the area.

Yavallo is a red wine made with Rufete, Merenzao, Mencía, Trincadeira and Carignan from a 0.2-hectare vineyard that is over 80 years old located at 750 metres of altitude, north of D.O. Arribes, planted on soils with a strong presence of iron and an extreme continental climate.

After manual harvest, the grapes are partly destemmed. They ferment with native yeast at a controlled temperature for 35-40 days. This wine is aged for 12 months in French oak barrels. This wine is bottled without clarifying or filtering. Only 390 bottles.

2017 Yavallo 2017 is a juicy red wine that mainly reveals aromas of ripe black fruit, spicy notes and mineral touches. On the palate it is complex, intense and very expressive. A wine with an elegant mid-palate and a long and persistent finish.
2016 Yavallo 2016 is a fresh, deep and complex red wine. A good vintage that reveals the balance between maturity and freshness. An intense nose with aromas of ripe black fruit, and spicy notes on a mineral background with toasted memories. On the palate it is intense and powerful yet elegant, and with a very lingering finish.
