About Nicolas Carmarans Minimus

When Nicolas Carmarans, proprietor of Café La Nouvelle Marie in 1994, one of the first establishments in Paris where natural wine could be enjoyed, decided to produce his own wines, he faced a new challenge that demanded both skill and passion. From the selection of grapes to the vinification process, since 2002 Nicolas has immersed himself in the art of creating authentic wines in his native region of Aveyron (Occitania), breaking conventions. His dedication and effort have not only resulted in exceptional wines that reflect his love for the natural and his commitment to quality, but they have also established him as a true innovator in the world of natural wine. At his beautiful estate "Le Mauvais Temps," he works tirelessly to restore the natural terroir and offer wines of unique character.

Authentic wines like Nicolas Carmarans Minimus, a rosé made 100% from the local variety fer servadou sourced from different plots with granitic soils. This selection of old vines located at an altitude of 450 meters is cultivated organically and treated biodynamically. The harvest is done manually, and then, in the winery, the selected grapes undergo direct pressing in an old vertical Burgundy press. Fermentation and maturation take place naturally in barrels, and finally, the wine is bottled without clarification or filtration.

Although the south of France is famous for its rosés, Nicolas Carmarans Minimus is entirely different from the salmon-colored wines of Provence. A unique natural wine with a magnificent aroma and a sparkling mouthfeel that perfectly reveals the terroir from which it originates.
