This group of fortified wine enthusiasts and connoisseurs from the Marco de Jerez y Montilla-Moriles has become genuine treasure hunters, unearthing dormant gems that only time and patience can create. Eduardo Ojeda and Jesús Barquín set out to rescue these forgotten wines and breathe new life into them, with all the respect for tradition and technique they deserve.

One of their most prized gems is La Bota de Manzanilla Pasada 120 Botas NO, sourced from the Sanlúcar de Barrameda winery Hijos de Rainera Pérez Marín. This wine is born from the combination of the "Bota Punta," located at the end of the solera, with the two finest casks of the Solera 1/15, and it has an average age of about 14 years at the time of extraction.

What makes this wine unique is the meticulous biological care of the flor. The casks are almost "a tocadedos," well above the usual level in the Marco de Jerez, which allows the layer of yeast to remain just enough to protect the wine without imposing an excessive oxidative effect. On the palate, this translates to saline and steely notes, elegant oxidative nuances, and a profound and complex character, the result of patience and time.
