About Fil·loxera & Cía Beberás de la copa de tu hermana

Fil·loxera & Cía Beberás de la copa de tu hermana is an organic white wine aged on lees made by Fil·loxera & Cía in the D.O. Valencia (Spain) with the Macabeo, Monastrell and Malvasia varieties.
 
Fil·loxera & Cía is a young, small winery founded in 2011 by Pilar Esteve, her husband José Domenech and Joan Llobell in the Valencian town of Fontanars dels Alforins. This adventure began in the married couple’s own home and has resulted in releasing small production wines made with the micro-plots they own. This is a true garage winery and although small, it has caught the attention of wine critic Parker.
 
Fil·loxera & Cía Beberás de la copa de tu hermana comes from the Domenech family’s small plots on their Valencian estate. These are completely Mediterranean vineyards that are traditionally cultivated without using any chemicals that could harm the environment. Ecological agriculture is used and the harvest is carried out manually when the grapes reach optimum ripeness.
 
To make the Fil·loxera & Cía Beberás de la copa de tu hermana wine, the whole bunches are macerated at 8ºC for two days. They are then destemmed and pressed to begin spontaneous alcoholic fermentation with native yeasts for over a month at a controlled temperature of 16 to 18ºC. Once malolactic fermentation begins, it is racked into French oak and acacia barrels and into stainless steel tanks, where it is left to age for 8 months.
 
 
With a name as provocative as Beberás de la copa de tu hermana (‘you will drink from your sister’s glass’), this garage wine surprises everyone before they even try it. But it certainly meets expectations when you do try it, because it just keeps surprising. A white with a delicate appearance but a very marked Mediterranean character.

Beberás de la copa de tu hermana 2018 is an aromatic white wine with delicate aromas of ripe white fruit, white flowers and herbaceous touches. On the palate it is sweet, unctuous and refreshing. A glyceric and voluminous wine with a lingering fresh sensation right to the end.
