About San Cobate Verdejo

San Cobate Verdejo is a Verdejo made in an entirely traditional and artisan way. It is made in San Cobate, an estate in the Ribera del Duero with vines aged 40 years old on average. This makes it a complex and balanced wine, with salty, citrus and mineral touches.

San Cobate Verdejo is a wine to take your time with. This is the only way you will be able to fully appreciate the uniqueness of each plot, spread over a total of 80 hectares. Emerging from Gumiel del Mercado, La Horra and La Aguilera, these wines are made with patience and a respect for natural processes. This restraint and ability to wait lasts until the harvest, which is carried out manually and in 15 kilo boxes.

Then when the grapes reach the winery, the rest of the process is completely artisan (the grape is selected, destemmed and gently pressed), with no hurry and no additions. San Cobate Verdejo is allowed to speak for itself while everyone else listens and interprets with their senses. The wine is then aged in French oak barrels. It is not filtered or clarified.

The result is a complex white wine with a subtle touch of wood that should be enjoyed in the same way it was made: slowly.

On the nose, it unfurls scents of orange peel and roasted nuances, faintly reminiscent of freshly ground coffee.
