About Mariotti Stella Maris Brut Blanc de Noir

A wine born from the sand and nurtured in the sea. The purest Ferrara style; the noblest Adriatic character. Mariotti Stella Maris Brut Blanc de Noir is not just any sparkling wine.

Produced by the Mariotti winery, this sparkling wine spends a year under the sea in contact with its lees. Nobody knows if this is the reason, or whether it’s down to the origins; what is clear is that Mariotti Stella Maris Brut Blanc de Noir has to be considered a very special sparkling wine, the result of an exciting history that began in 1976 with Giorgio Mariotti. In Argenta, a small town in the province of Ferrara (northern Italy, in Emilia-Romagna), Mariotti built La Bottega del Vino a kind of research laboratory. His experiments and research soon led him to discover the uniqueness of the area’s sandy soils and its native varieties, like the Fortana. In the case of Azienda Agricola Mirco Mariotti this variety, which has been cultivated in the area since the 11th century, grows in the Fondo Luogaccio vineyard in San Giuseppe di Comacchio, considered a historic vineyard and lying a few kilometres from the Adriatic Sea.

Mariotti Stella Maris Brut Blanc de Noir grows there, in this same vineyard. From here it goes directly to the winery, where it is gently pressed and transferred to stainless steel tanks for the first fermentation. Once the base wine has been made from the first fermentation, it is time to add the expedition liqueur and bottle it, to achieve that second fermentation that creates those sought after bubbles. Usually at this stage the bottles are stored horizontally, in the dark, only occasionally interrupted (depending on the winemaker) by small movements and rotations to ensure that most of the wine has been in contact with the lees (known as remuage). However, in the case of Azienda Agricola Mirco Mariotti the darkness of the cellar is swapped for the depths of the sea, leaving the bottles of Mariotti Stella Maris Brut Blanc de Noir in oyster baskets where they will stay submerged for a year. There is a reason for this decision, because while in the cellar the yeasts would end up at the bottom of the bottle, in the sea they stay suspended and floating inside the bottle, guaranteeing full contact with the wine. A detail that makes all the difference.
