In Gevrey-Chambertin, this understanding of the landscape becomes particularly clear. The cold climate refines the expression of pinot noir, the limestone adds tension and precision, and the mist alongside the light creates a constant sensation of restraint. Nothing seeks to stand out overtly, yet everything possesses presence.

It is in this balance between discretion and character that Laurent Ponsot Latricières Chambertin Cuvée du Palmier is born, a precise interpretation of the Latricières-Chambertin Grand Cru in the hands of Laurent Ponsot.

Within the historic region of Gevrey-Chambertin, one of the global epicentres of pinot noir, the climat Latricières-Chambertin, classified as Grand Cru, is situated at a slightly higher and cooler position, with altitudes around 270-300 metres, which favours slower ripening and more tense profiles.

The limestone soils with the presence of marl and clay compel the vine to delve deep in search of balance. This apparent poverty is key to reducing the plant's vigour and concentrating the expression of the fruit. The continental climate, with long winters and moderate summers, ultimately defines a style based on finesse, structure, and tension rather than breadth.

The harvest is carried out manually, carefully selecting the bunches to preserve the integrity of the grape. In the winery, destemming is done according to the vintage, separating the stems to avoid green tannins. The alcoholic fermentation takes place in vats, where maceration allows for the extraction of colour and structure from the skins.

Subsequently, the wine undergoes malolactic fermentation and is aged in oak barrels, where it evolves slowly, gains complexity, and maintains its original identity. Finally, it is gently clarified and bottled.
