About La Inglesa Palo Cortado

Everything from the D.O. Montilla-Moriles is exquisite. Absolutely everything! Nevertheless, within this outstanding category, there are various classes. At the pinnacle stands La Inglesa Palo Cortado. Palo cortado, in general, is a remarkably unique wine; however, when this passion-evoking fortified wine is crafted in one of the most traditional wineries in the northeast of Andalusia, it takes on an entirely new dimension. 
 
Directly from Moriles Altos, the Pedro Ximénez grapes, which flourish on the limestone-rich soils abundant in this region, arrive at the lagar of La Inglesa. Here, it is known as Tosca Hojaldrada, whereas in other areas like the D.O. Jerez-Xérès-Sherry, it is referred to as albariza. Ultimately, what truly matters is not so much its name, but its magnificent properties for retaining the scarce rainfall like a sponge, providing the plant with a genuine relief that is greatly appreciated during the summer months (with temperatures exceeding 30°C). 
 
Once harvested and selected, La Inglesa Palo Cortado begins its production in the winery located in the Sierra de Montilla. There, the free-run juice is pressed, obtained with barely any pressure. Later, this high-quality juice is transferred to the wine casks where it will ferment and age for an average of 20-25 years. During this time, something truly extraordinary occurs within the vessel, as what begins as a biologically aged wine will ultimately transition into oxidative ageing. Both processes, each with their distinct characteristics, will impart qualities to La Inglesa Palo Cortado that render it unique, special, and unrepeatable.
