About Bhilar Blanco

Bhilar Blanco is an organic, barrel-aged white wine made with the Garnacha Blanca and Viura varieties in the D.O.Ca. Rioja by Bodegas Bhilar.

David Sampedro is an agronomist who, having travelled the world, set up his own project in his hometown of Elvilla (Bhilar in Basque). With an emphasis on valuing native varieties from old vineyards, he studies the different types of soils, exposures and heights of his estates to be able to carry these characteristics into each of the wines he produces. Likewise, the winery is built on the principles of sustainability and a commitment to minimal intervention.

Bhilar Blanco comes from the vineyards they own around the winery, with the exception of a small amount that comes from local winemakers who cultivate under David's supervision. Strains that are 100% ecological, grown using organic practices and biodynamic methods. The whole process involves sustainable viticulture where the number of treatments is reduced as much as possible, production is meticulously controlled and tractors are replaced with work horses. The grapes are manually harvested and placed in 10 kg boxes.

When the Bhilar Blanco grape reaches the winery, it is destemmed and left to ferment spontaneously with its own skins and native yeasts in concrete tanks. It is then pressed and the resulting wine is transferred to new and used French oak barrels, where it remains for 6 months.

Bhilar Blanco belongs to the village wine collection that Bodegas Bhilar makes in the “orange wine” style. A 100% organic, sharp, austere and mineral white wine that stands out for its incredible acidity.
