The winery Arnaud Baillot is located near the historic town of Beaune, in the heart of the Côte d'Or, in Burgundy, a region renowned for its almost infinite fragmentation of vineyards. Arnaud, a great enthusiast of Burgundy and its myriad facets, personally selects the winegrowers from the most distinguished villages and, together with his wife Laure, oversees all the work in the vineyards. But perhaps the most fascinating aspect is how he chooses each oak barrel for maturation, always seeking to enhance the authentic expression of each plot and faithfully convey the language of the terroir.

The production of Hautes Côtes de Beaune Rouge follows this same philosophy of detail and precision. The harvest is carried out entirely by hand, selecting the pinot noir grapes at the exact point of ripeness. Fermentation takes place in stainless steel tanks to preserve the purity and freshness of the fruit, and then the wine ages for 12 months in French oak barrels, 20% of which are new, providing structure and subtlety without masking the identity of the terroir.
