About Peacock Wild Ferment Chenin Blanc

A symbol of vanity and beauty, the peacock is a regular visitor to the biodynamic vineyards of False Bay, a beautiful wine estate bought by Paul Boutinot (founder of Waterkloof) in Stellenbosch (Coastal Region), which is only two miles from the sea. Undoubtedly, this bird with its majestic and brilliant feathers is an indication of the purity and biodiversity of the place where, with organic and biodynamic practices, it is even reminiscent of a real garden. And it is in honour of this animal that a collection of refined wines is launched under the name Peacock Wild. A range of avant-garde wines that are made with minimal intervention and maximum care.

One wine within this collection is Peacock Wild Ferment Chenin Blanc, a single-variety Chenin Blanc made mainly from old vines aged between 20 and 50 years old. The vines are located on the high slopes of the estate, 300 metres above sea level, and are cultivated without any chemical products and with biodynamic treatments that will not harm the vineyard or its surroundings (including peacocks). When the grapes reach optimum ripeness, they are harvested manually and taken straight to the winery. There the grapes ferment spontaneously with native yeasts in a combination of old 600-litre barrels and concrete eggs. Finally, the wine is aged on the lees for 6 months to add complexity.

When it is ready, we can open a bottle of Peacock Wild Ferment Chenin Blanc and let ourselves be won over by its charming fruity freshness. So there is nothing better to represent all this natural beauty than with a symbol of a peacock.


 

2020

Peacock Wild Ferment Chenin Blanc 2020 is an aromatic white wine with fragrant notes of ripe pineapple, peach and lime accompanied by hints of vanilla. On the palate it is fresh, smooth and elegant. A wine with pleasant acidity, lovely texture and a long, elegant finish.
