About Pazo Señorans Aguardiente de Hierbas

Pazo Señorans Aguardiente de Hierbas is a spirit crafted from 100% Albariño grapes by the Pazo Señorans winery. It is traditionally distilled in copper stills over direct fire, undergoing a double distillation. The spirit is aged in 2000-liter stainless steel tanks. It is infused with a blend of herbs and dried seeds.

The Pazo Señorans winery is located in Pontevedra, specifically in the Salnés Valley, under the protection of the Rías Baixas Designation of Origin. The building is a magnificent manor house that was converted into a winery, showcasing the grandeur of the houses constructed in the countryside in the 16th century. The manor house and winery started their journey in 1989 thanks to the marriage of Marisol Bueno and Javier Mareque. Nowadays, their four children are the ones managing the business.

The primary philosophy of this winery is to reflect the peculiarities of the region and Albariño grapes in each of the wines and spirits they produce. They consistently maintain excellent care of the vineyards and continuously study ways to improve this care using models based on remote sensing and sensor technology
