About Novetat Total

Novetat Total is a natural red wine crafted from the indigenous varieties callet and fogoneu on Mallorca, in the Balearic Islands (Spain), by the daring project Sistema Vinari.

Eloi Cedó commenced his winemaking journey in Mallorca alongside 4 kilos. However, after departing from the project, he ventures to explore the purest expression of the island's varieties and terroirs. What initially began as a bet among friends has evolved into a genuine project, Sistema Vinari, featuring micro-productions that are natural and free from any stereotypes.

In the field, Novetat Total is born from red clay-limestone soils, rich in iron, situated at altitudes of 100 to 200 metres above sea level. All practices are ecological and biological, and although they lack any certified label, they are profoundly respectful.

Once the grapes for Novetat Total are hand-harvested, they are vinified with minimal intervention. This involves fermentation with 20-50% whole clusters in plastic and stainless steel with macerations lasting 5-25 years. Subsequently, the wine ages for 4 months in stainless steel and cement tanks before being released to the market. The wine is neither clarified nor filtered, and no sulphites are added.

As its name suggests, Novetat Total is a novel initiative showcasing the purest side of the Mediterranean island. A bold red wine with a production of fewer than 100 bottles of 1 litre.

2019

Novetat Total 2019 is a juicy red wine with aromas of red fruits, citrus notes and hints of herbs and lilac flowers. On the palate it is fresh, smooth and rich. A flavoursome wine with a bitter touch that is refreshing until the end.
