The Wasem winery, located in Ingelheimer Grund (a region in Germany on the left bank of the Rhine), is one of Kolonne Null’s major partners. This family business, founded in the 18th century, was one of the first to listen to Philipp Rößle’s crazy idea to make alcohol-free wines. That first meeting culminated in the production of Kolonne Null Silvaner. To this day, this relationship is just as fruitful. Together they have launched Kolonne Null Rosé Wasem Edition, a sparkling rosé made from Silvaner grapes that come directly from the Wasem vineyard, where the quality of each cluster is scrupulously sought and cared for.
Kollone Null usually goes to the vineyard itself, where they talk with each winemaker about the characteristics and profile sought for each wine. In these 30 hectares at Wasem, Kolonne Null finds the best raw material for their wines, which then have the alcohol removed gently through the vacuum distillation system. This process, which is not aggressive, allows the varietal aromas of each variety to be properly respected, making Kolonne Null Rosé Edición Wasem a real spectacle (despite not having alcohol).
In this sense, the symbiosis between field work and laboratory work is key. Both tasks should complement each other. There is no point in doing wonderful work in the laboratory if the raw material does not meet the minimum quality requirements (and vice versa). Perhaps here, in this close relationship, is where the success and great quality of Kolonne Null Rosé Edition Wasem lies.
