About Derain Saint-Aubin Blanc

Dominique Derain was a cooper. But this noble profession didn’t seem to be enough for him and in 1983 he ventured into wine. Together with Catherine (his wife at the time) they bought about 5.5 hectares of vineyards in Saint-Aubin, the village west of Puligny-Montrachet (in Burgundy), where he was one of the first madmen to start farming biodynamically. Although the business is now in the hands of Julien Altaber and Carole Schwab (Domaine Sextant), Dominique Derain remains synonymous with quality; these are wines not to be missed. The list is long. And we would recommend you start with Derain Saint-Aubin Blanc.

Derain Saint-Aubin Blanc starts life in the plots around the Montrachet hill, where clay and ferrous soils abound. Work is manual and counts on the help of animals. Horses are in charge of ploughing the vines planted on hillsides and cared for with rock dust, clay and cowhide manure. Before climate change, getting Chardonnay to ripen properly was much more complicated than it is now, where the clusters and berries reach their very best. The entire Dominique Derain team waits for this moment to begin the manual harvest. This step, one of the most important, is carried out using plastic trays, and the grapes are quickly taken to the winery. Derain Saint-Aubin Blanc is directly pressed and transferred to old oak barrels, where it will ferment with native yeasts and spend 14 months aging on its lees.
