Zoco Pacharán is a deep red liqueur, which will mature into brick hues, offering on the nose an array of aromas reminiscent of aniseed, complemented by gentle fruity notes evocative of plums and cherries. Balsamic nuances also emerge. On the palate, it is refreshingly crisp, thanks to the acidity provided by the sloe berries used in its production, with a flavor balanced by the sweetness of the anise. About Zoco Pacharán
There is nothing more quintessentially Navarrese than a fine glass of pacharán. Historical accounts suggest that this beverage was already being enjoyed in the north of Spain during the Middle Ages. No wedding was complete without this sloe liqueur! Even Queen Blanca of Navarre turned to it as a healing remedy when she fell ill in 1441 at the Monastery of Santa María de la Nieva. The family-run business Zoco - Ambrosio Velasco is at the helm of producing this traditional liqueur, boasting a recipe that has been a family treasure since the early 20th century. The creator, Ambrosio Velasco, introduced Zoco Pacharán among his offerings in 1926. Since then, the family has diligently continued its production, always ensuring the highest quality at every stage of the process.
Zoco Pacharán is crafted using time-honored methods, by infusing sloe berries in anise. This fruit, known in Navarra as marañón, is similar to a plum - albeit smaller - with a bluish-black hue and a distinctly tart and astringent flavor. Perhaps for this reason, the optimal ripeness is crucial; although it is not consumed as a fruit, it must meet the necessary standards. Upon reaching this stage, Zoco Pacharán is harvested and blended with anise, where it will steep for approximately three months.
Natural stabilization and a final filtration are the finishing touches to this liqueur, which also proudly bears the Specific Designation of Navarrese Pacharán. This mark of excellence became necessary after the surge in popularity Zoco Pacharán experienced in the late 1970s, which led to a proliferation of copies and imitations emerging at every turn.
