Cognac is a type of brandy that is produced through double distillation in copper stills of wine that has been made with white grapes that come exclusively from the French region of Cognac.
In order to be able to quality as cognac, the spirit must have been aged for at least two years in oak barrels. Depending on the ageing time, cognac can be classified as: VS (Very Special), for cognacs with at least two years of ageing; VSOP (Very Superior Old Pale), for cognacs that are aged for at least four year; and Napoleón, XO, Hors d’âge or VSOPXO (Very Special Superior Old Pale Xtra Old), for cognacs that have been aged for at least 6 years in oak barrels.
