About Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru 2014

Twenty-five years ago Delphine Cazals and her father Claude planted a plot of vineyards in Oger, very close to a chapel. This is where Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru, the sparkling wine produced in this vineyard, is harvested within the A.O.C. Champagne.

This area, in the Marne region, is the origin of these famous sparkling wines from the northwest of France. At Claude Cazal, the only variety grown is Chardonnay, one of the three grapes permitted by the A.O.C. Champagne. This company, founded in 1897, currently has 9 hectares of vineyards classified as grand cru. Here the vines grow on the region’s typical chalky clay soils and under an oceanic climate with continental overtones.

In the winery, the unusual feature of Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru lies in its barrel aging. It all starts with a manual harvest, where the grapes are collected and taken to the pressing centres. Once the must has been made, and after racking, it ferments in stainless steel tanks at a controlled temperature. Alcoholic fermentation is also followed by malolactic fermentation and oak barrel aging, where Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru spends time in contact with the wood. Without any blending or mixing, the wine is bottled and spends 6 years in the cellar, in contact with the lees, where it will undergo a second fermentation and become sparkling.

Claude Cazals has now passed away, but beyond the limits of time and space, the relationship between father and daughter lives on. It’s more alive than ever in fact, thanks to Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru: the perfect champagne to toast with dad.
