About Brimoncourt Blanc de Blancs
The champagnes classified as 'Blanc de Blancs' have often been heralded as the most sought-after creations by numerous connoisseurs. This is a distinctly stylish French term that denotes those white wines, particularly sparkling ones, which are made solely from white grapes. Among the myriad of legendary maisons dedicated to this craft within the AOC Champagne, we find Brimoncourt, an esteemed house with over three centuries of history that, following a period of decline, has been revitalized by the former notary and art dealer Alexandre Cornot.
Nestled in the heart of Champagne, specifically in Aÿ, Cornot crafts his Brimoncourt Blanc de Blancs using chardonnay grapes sourced from Grand Cru-classified vineyards in the Côte des Blancs. These are mature vines where integrated farming is practiced to preserve biodiversity and the balance of the plant. In the winery, the wine is vinified according to the traditional Champagne method with an initial fermentation in stainless steel tanks at a controlled temperature and a secondary fermentation in the bottle, followed by a 48-month maturation on the lees. At disgorgement, a dosage of 8 grams of sugar per liter is applied.
