About Thistledown Sands of Time Grenache
Blowing a dandelion and making a wish to the wind is one of the simplest and most poetic acts imaginable. This image of lightness and dreams cast to the horizon inspired Giles Cooke and Fergal Tynan when they met in 1998, the night before they sat their exams to become Masters of Wine, the highest accolade in the wine world. From this friendship, the winery Thistledown was born in 2010, named after this wild down that floats freely on the breeze, with a clear desire to demonstrate that Australian wines can be crafted away from over-ripeness and excessive oak.
From the district of McLaren Vale in the South Australia region, Thistledown Sands of Time Grenache reinterprets the typicality of the Australian landscape. The wine originates from a meticulous selection of old vineyards, with century-old vines planted over 80 years ago, thriving in harmony with their surroundings. The plants delve their roots into distinctive fine sand and iron-laden soils, impoverished grounds that limit the plant's yield and impart a unique minerality. The area benefits from a Mediterranean climate tempered by sea breezes from the coast, resulting in cool nights that preserve the grape's natural acidity and tension. The predominant variety is Grenache, a traditional grape that reveals its most elegant and fragrant version in these soils. The vineyard is managed with minimal intervention, respecting biodiversity and conducting a manual harvest in several passes to pick each bunch at its optimal point.
For the crafting of Thistledown Sands of Time Grenache, the winery employs a meticulous process that preserves the fruit's purity. Following the manual harvesting of the bunches, a portion of the grapes is vinified with stems, the vegetal part of the bunch that adds structure and aromatic freshness. Alcoholic fermentation begins spontaneously with indigenous yeasts in small vats. During this time, a gentle maceration is conducted, allowing the must to remain in contact with the grape skins to extract colour and aromas delicately. Once fermentation is complete, the wine undergoes a 10-month maturation in a combination of used French oak barrels and concrete vats. This use of concrete and seasoned wood allows for the natural micro-oxygenation of the wine, enhancing texture without overshadowing the varietal aromas. Finally, the wine is respectfully clarified and bottled, retaining all its freshness.
