About Fabio Coullet Secuencial

The most picturesque landscapes often present unique challenges. The difficulty of access has been a blessing, as it has protected these places from human intervention, allowing the environment to remain untouched and preserved. This inaccessibility has acted as a natural shield, safeguarding the beauty and authenticity of these natural surroundings. Axarquía, a unique location situated to the east of Málaga and surrounded by steep mountains with slate soils in various stages of decomposition, is where we find Fabio Coullet. A viticulturist dedicated to his environment, whose project is based on cultivating indigenous varieties in extremely challenging terrains.

Among the collection of wines he creates in such a captivating landscape, he showcases Fabio Coullet Secuencial, a white wine crafted from the indigenous varieties moscatel, pedro ximénez, and doradilla. These varieties come from old vines located in the highest areas (between 300 and 900 meters in elevation) and on slopes of up to 70%, necessitating heroic viticulture during harvest. In the winery, Fabio Coullet Secuencial is produced with minimal intervention vinification, using must obtained from a meticulous selection of the finest grapes and gentle pressing. Fabio Coullet Secuencial ferments with native yeasts in stainless steel tanks and, finally, remains in this same vessel for several months on lees.
