About SantYuste Paraje Fuentecilla

SantYuste Paraje Fuentecilla is a natural white wine made by Esmeralda García with the Verdejo variety in clay jars in Segovia (Castilla y León).

Esmeralda García set up her own project after training for several years in different wineries. She gained a whole range of professional experience that taught her what she needed to know: that a good wine needs time, respect and calm. This is how she makes natural wines, using vines grown with the same passion her ancestors had. These expertise have led to exploring and discovering new ways with the Verdejo variety.

SantYuste Paraje Fuentecilla starts life at 820 metres above sea level. These are pre-phylloxera strains that are over 130 years old and planted in aeolian sandy soils with sedimentation and marine fossils among the vines. They are cultivated using environmentally-friendly agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.

When the grapes reach the winery, they are partially destemmed ready to be made into the SantYuste Paraje Fuentecilla wine. They are pressed directly, without racking and the resulting must ferments spontaneously with native yeasts in clay jars. It remains there with its lees for 6 months. It is finally bottled without being clarified, filtered or adding sulphites.

SantYuste Paraje Fuentecilla is a natural white wine that reveals the lighter side of the SantYuste wine collection. A Verdejo with an open and sweet profile.

2019 SantYuste Paraje Fuentecilla 2019 is a white wine with delicious aromas of very ripe yellow fruit, dry herbaceous notes and subtle spicy touches. On the palate it is pleasant, sweet and volatile. A wine with acidity and volume that maintain a good balance right up to the finish.
