About Hervé Souhaut Saint-Joseph Clos des Cessieux

With a background in biology, Hervé Souhaut was always acutely aware of the impact of chemicals on nature. His scientific curiosity led him to become interested in wines that honour the environment, those free from additives and chemical processes. It was then that he discovered his true passion for natural wines. As is often the case with passions, he found an opportunity to pursue it. It was in the vineyards of his in-laws in Ardèche, east of the Rhône Valley, where he could begin to implement his principles.

An example of this work can be found in Hervé Souhaut Saint-Joseph Clos des Cessieux, a wine from a plot that had been leased to another producer and that Hervé and his family reclaimed in 2013. This plot is located on slopes that form a spiral, "Les Cessieux," where 32-year-old syrah vines are planted on granite soils with a unique exposure. Hervé employs a biodynamic approach in his vineyards (albeit uncertified), meaning he works with the lunar and astrological cycles, respecting the soil's life and the plants' energy. For this reason, the magic of the wine begins in the vineyard. 

In the winery, Hervé does not destem the grapes to preserve the essence of the fruit. The maceration is prolonged, and fermentation takes place at low temperatures in wooden vats, allowing the aromas and flavours of the syrah to express themselves in their purest form. Subsequently, for 12 months, the wine is aged on its lees in barrels of various wines, which adds complexity and body. Finally, the wine is bottled unfiltered with a sulphur content below 25 mg/l, maintaining its full purity and authenticity.

In this way, from a unique terroir, Hervé Souhaut Saint-Joseph Clos des Cessieux has succeeded in capturing the essence of Saint-Joseph in its purest state. A wine of great finesse with a distinct identity and, above all, authenticity.
